We technologically control temperature, humidity and ventilation to recreate the best drying conditions in rooms where the grapes will remain on racks from harvest to the beginning of January. Recommended in combination with lamb, seasoned cheeses, dry desserts, dark chocolate. Or alone, to meditate.
